I made the Mini Cheeseburger Salad with Yellow Mustard Vinaigrette. It was fantastic!  The DH didn't even realize he was eating turkey, he thought it was beef.  Here's the recipe: 

Ingredients

  • 4 tablespoons EVOO – Extra Virgin Olive Oil, divided
  • 2 pounds ground turkey
  • 1/2 small red onion, grated
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon (a palmful) grill seasoning
  • 1 tablespoon (a palmful) poultry seasoning
  • 3/4 pound brick sharp cheddar cheese, sliced 1/4-inch thick into small squares
  • 3 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 2 large hearts romaine lettuce, coarsely chopped
  • 1 cup sliced pickles, drained and chopped – choose from sweet, half-sour or dill varieties
  • 1 pint cherry or grape tomatoes, cut in half

Preparation

Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. (You could also preheat a grill pan or a large nonstick skillet over medium high heat or, preheat outdoor grill instead of the skillet).

Step

While the pan is heating up, combine the meat with about 3 tablespoons of grated red onion, Worcestershire, grill and poultry seasonings or salt and pepper. Form two-inch meatballs, then flatten them into patties.

Step

Cook the mini burgers for 3 minutes on each side then top with cheese. Tent the mini cheeseburgers loosely with foil to help the cheese melt.

Step

While the burgers are cooking, whisk together the mustard and cider vinegar in a large salad bowl. Continue whisking and stream in the remaining 2 tablespoons EVOO and season with salt and pepper.

Step

Finely chop up the remaining red onion and add it to the bowl along with the romaine, pickles and tomatoes. Toss the salad to evenly coat everything in dressing.

Step

To serve, arrange the salad on a large platter and slide the burgers on top.

That looks GREAT!!!!!!!!! Thanks for sharing that. Mike got me a Eating Right After WLS cookbook yesterday on sale and I LOVE IT! It has a ton of great recipes in there and one was for a Strawberry Cheesecake full of protein and NO SUGAR with LITTLE FAT! I cant wait for him to make it. I will type up the recipe in a bit when I get off. There is over 200 recipes in that book and some look soooooooooooooooooo YUMMY!!!!

Jillybean!  I went looking for that book!  I couldn't find it under that exact title.  I did find a book called Eating WELL after Weight Loss Surgery.  Could this be the book you're mentioning?  The Amazon site claims 140 recipes - but if yours is different, please share the when and where the book came from!!!!!!!  I want I want I want (pitching conniption fit)

LOLOL I got mine on sale at Barnes and Noble this weekend. I went in to get Randy Jacksons post bypass recipe book BODY WITH SOUL but it was almost 30 bucks so I found this one instead. It is called Eating WELL after weight loss surgery. Sorry about that mix up. Its by Patt Levine. It says over 140 recipes inside but I think its close to 200 if you count all the desserts and the sauces. I like it. Each page also tells you the calories and fat and protein in each serving and at what point post op you can have it. LOVES IT!!!!

Hey Ren!!

I don't generally use recipes per se, just kind of throw things together.  Fortunately, my brother's a wonderful guinea pig!!

Last week, I threw some boneless, skinless chicken breasts in the crockpot, covered them with Pace Picante Salsa, and cooked them on high for 4 hours.  Then,  I took the chicken out and mixed a 16 oz. container of sour cream into the salsa in the crockpot and put the chicken back in for 2 hours (or until it falls apart).

My guinea pig said it was delish!!!

ok Ren.....here's something for you to try if you like cheesecake. 

take some plain greek yogurt and mix in 1/2 packet of your favorite fat free/sugar free pudding powder.....mix it really good......you will get the flavor of the pudding but it will totally taste like it's been cheesecakified with the yogurt.  I had vanilla today and it tasted like plain cheesecake......then over the weekend I tried it with chocolate and it tasted like chocolate cheesecake!

EDIT:  the consistency of the yogurt will turn into a mousse like thing that is really easy to eat :)  AND filling!
