Yes I know this is classified as a Men's  board and I am not interested in your other posts really, you need your own space. But its also not exclusive, open to anyone, but I just want your Beef  jerkey recipes
But Iknow Guys are good cooks too especially when it come to Beef Jerkey, deer jerkey.

Anyone here care to share a recipe they make?

Here's what I do. I don't have a food dehydrator, which is what you really need. So I improvise (actually, I think I first saw this on Alton Brown).

Ingredients--
1 1/2 to 2 pounds flank steak
2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 tablespoon honey
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
1 teaspoon red pepper flakes

Special Equipment--
1 box fan, 4 paper air-conditioning filters, and 2 bungee cords

Preparation--

 

Trim the flank steak of any excess fat, place in a zip-top bag, and place it in the freezer for 1 to 2 hours in order to firm up.

Remove the steak from the freezer and thinly slice the meat with the grain, into long strips.

Place the strips of meat along with all of the remaining ingredients into a large, 1-gallon plastic zip-top bag and move around to evenly distribute all of the ingredients. Place the bag into the refrigerator for 3 to 6 hours.

Remove the meat from the brine and pat dry. Evenly distribute the strips of meat onto 3 of the air filters, laying them in the grooves and then stacking the filters on top of one another. Top these with 1 empty filter. Next, lay the box fan on its side and lay the filters on top of it. Strap the filters to the fan with 2 bungee cords. Stand the fan upright, plug in and set to medium. Allow the meat dry for 8 to 12 hours. If using a commercial dehydrator, follow the manufacturer's directions.

Once dry, store in a cool dry place, in an airtight container for 2 to 3 months.

Thanks that sounds good I forgot to say I do have an Excalibur Food dehydrater and just thought you guys might share some recipes.

We can get flank steak or london broil really here at a good price when its on sale.
I have some of that Liquid smoke that is Pecan flavor that would probably be good too. thanks

It's not rocket science,   NO    NO   or else many of us guys would be in trouble .. 

  I bought a food deyhdrator last Xmas at Walmart ..   It's see-through and has like 4 or 5 round shelves in it ..   I use that to make it ..  It's kinda like having a hair blow-dryer motor going in it when it runs ..   Quite noisy, but it does a good job .. 

  I pefer to use the "cut steak into strips" method, rather than use ground beef and that awkward (and a mess to clean) "jerky gun" to shoot sticks ..   

  The dehydrator comes with different packets of flavorings, inclulding teriyaki, pepperoni, hot Cajun, etc.       The refills that I get are only for terriyaki, so that is what I use ...

   You mix the seasoning packet with some water, per the directions, and add it to the cut strips of steak in a clear Ziploc bag and marinate overnight in the fridge, turning it over once or twice ..  The next day you take them out and lay them on the deyhdrator shelves, plug it in, and let it run for about 4 hours, IIRC ..   Just enough to get them tender and "done" w/o drying them out and making them tough ..  Be sure and let them sit out in the air for  2-4 hours before putting them in Ziploc bags to freeze, if you're going ot do that ..  Otherwise they will last fine at room temp for up to a week ..

   You can also use pork steak and chicken strips, but I have never tried those ..  They also advise that if you make jerky out of pork or chicken to be sure and heat it on a cookie sheet in the oven at low heat for at least 1/2 hour first, to kill off any bad guys ..   

    I have tried "Uncle Buck's" various jerky seasonings from Bass Pro Shops before and did not care for them, btw ..

My husband will be looking for some beef jerkey.

He really loves Bass Pro shops he could stay there all day,
I don't care as long as he drops me off at the book store.

But then I will pick  up some computer magazines for him.

I go down to the convenience store and buy a package of it. Just sayin'.

Although to be quite honest, I have cooked a few steaks to the point that they're indistinguishable from jerkey. If I were to write it up as a recipe it might look something like this:

Take a damned fine piece of meat, carefully salt and season it, throw it on the grill and then get busy doing something else and forget about it for about 45 minutes to an hour. Remove promptly and feed to the dogs.
The free man owns himself. He can damage himself with either eating or drinking....... If he does he is certainly a damn fool, and he might possibly be a damned soul; but if he may not, he is not a free man any more than a dog.
