veggie suggestions?

i'm wondering what and how you guys are eating your veggies?  i buy fresh, they go bad before i can finish them.  i buy frozen, they get freezer burn before i can finish them.  wondering what types of veggies you are eating and how you prepare them so you can eat enough before they go bad?  anyone substitute veggie drink instead?  i have never liked them but wasn't sure if they are ok to occasionally substitute when having troubles getting real veggies in.

Try buying a few veggies that you can use both raw for snacks and then in your meals.  For example, a red pepper can be cut in half -for several snacks, the other half you can roast, or chop up into an omlette, or use it to make chilli. The veg drinks are not really an alternative because they are loaded with salt and other "stuff".  Try to pick things with a longer shelf life.  Peppers, carrots, baby tomatoes and spinach come in small packages that can usually be used up in a week and can be used for breakfast lunch, dinner and snacks. 

It does take a little while to get used to buying less - and it is even harder if you are not preparing meals for several people.

The other option is to plan and shop for your meals every few days - keep less fresh/frozen at home and only buy what you need when you need it. (This only works if you have the time)

I cook fresh veggies and puree them, freeze and put into ziplock snack bags.  Defrost and add to my chilli /soups.  But I'm only 3 weeks out, what about the stores that have salad bars.  I thought that might be something I would do when I can actually eat veg.  Just a suggestion.  I think what we throw out would balance the cost of buying in this method.  Plus you can get a great varriety.

 I love me some veggies!  I love them done many ways, but one of my favourite ways is in soup.  I load up a pot full of veggies and protein and make it as thick as possible and freeze in individual portions.  Also, try grilling or roasting your veggies for a change.

I usually buy as I go for fresh veggies, but I also use frozen veggies. I like the green giant steamers. Their nutrition facts are pretty good and they are tastey. I'll have some with dinner and then store the left overs in the fridge for the next day. I usually have enough for three meals even if someone else has some of the veggies with me!

Ibed....I use my veggies up in stir frys, or soups...but it totally depends on what you're tolerating...fresh v.s. cooked or roasted....I used some cauliflower up in my chicken soup the other week..it was great!!  Squash are great...but again...depends on you and your tastes!!  good luck...Patti K.
