Morning;

Going to be a beautiful day here today....going to do a little retail therapy...

B - protein shake

s - greek yogurt - I tried the OIKIS (sp) brand after reading about it on this site....its fantastic and very filling....not like regular yogurt...thanks all

l - ham cheese and pickle roll ups....packing a cooler to go for my shopping spree with this/water and apple slices

s - apple slices

d - will be out - protein and veg....and yeah maybe a glass of vino

s - tea

All water and vits

Work today - but it seems to be a slow day today.  I like that, especially on a Monday :)

On the menu today:

B: Protein Shake

L: Pulled BBQ Chicken [2.5oz] and 1/2 very small sweet potato - tried eating it yesterday but after the chicken, I didnt have room so I may not eat it today either.  We'll see how it goes.

D: Unsure.  Likely more chicken or I may make Stuffed Mushrooms [yes, I am addicted!].

S: 100g Greek Yogurt, 2 slices light Provolone, 2 slices Salami, 1 pomegranate - might not eat all of this but brought it just in case.  It's a long time between lunch and dinner when Im working.

The recipe is easy-peasy....

1/3 pkg of light herb & garlic cream cheese [room temp, it's easier to mix]
2-4 tbsp grated parmesan
1 can flaked or lump crabmeat

I mix it all together and stuff large mushrooms.  The mix usually fills 10 of the big stuffer mushrooms.  I put them in a toaster oven at 350F for 20 minutes.

I wouldnt only because freezing changes the texture of mushrooms - makes them rubbery.  I keep them in the fridge and eat about 3 per meal so they dont last long.   You could freeze the mix though.  Freezing cheese is fine since it'll be melted anyway.

Sounds deliscious!!  What type of mushroom do you recommend for stuffing (never done it before).  Also, have you calculated how much protein in each?

The mushrooms I use are called "Stuffer Mushrooms" - they come in a cello pack on a styrofoam like tray.  They look like really big white button mushrooms.

I've calculated the nutritional value per mushroom as:

46 calories
2g fat
1.3g sat. fat
1.4g carbs
.3g fibre
5.4g protein

Thanks.  I'm definitely going to try them.  It is always nice to have something new once in a while and I love mushrooms.
