Banana Walnut mini-muffins
So....this will be my first attempt at switching out a recipe- but the dietitian at WMC Ottawa (Jennifer) was so inspirational that I thought I would give it a try with one of my favourite recipes....any advice?
and....anyone know how to calculate the nutritional value per muffin afterwards? (Janet: is there an app for that??)

Here is the finished product! So cute!!

They actually tasted pretty good. Light and fluffy and fairly moist. Not exactly like the original but a very tasty alternative. Here is the recipe if you want it:
Jennifer's High Protein, Low Fat, NSA Banana Walnut Mini Muffins
makes 48 mini muffins
1/2 c plain greek yogurt
1 cup Splenda
4 mashed bananas
3 eggs
1 1/2 c chick pea flour
1tsp baking soda
1/2 c chopped walnuts
I was a little disappointed at the NI that came up (I used Spark People) as I thought they would be higher in protein.
Maybe add a scoop of protein powder next time?
