Messing with a recipe so hoping for
some feedback from the more experienced cooks on the threads (pokes Ian gently)
So I found a Raisin Bran Muffin with not too too bad carbs, decent protein and the calories aren't gonna set me back in pre-surgery weight
But...it's... not sweet enough (dont go "aww muffin" please lol)
here's the recipe and the nuts (who would have ever thought you would be "nuts" and it would mean something totally different?)
Low Fat Carrot Bran Muffins
1 1/2 cups whole wheat flour
1 1/2 cups bran (flakes)
2/3 cup raisins (they have iron in them so I'm not giving them up)
2 Tbsp + 2 tsp brown splenda (more maybe?)
1 tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 egg (lightly beaten)
1 3/4 cups skim milk
2 tsps lemon juice
2 tbsps unsweetened applesauce
1 cup carrot (grated)
Preheat oven to 400°F.
In a medium bowl, combine flour, cereal, raisins (you may add the raisins in with the wet ingredients if you prefer), sugar, cinnamon, baking powder, and baking soda
In a large bowl, combine egg, milk, margarine, applesauce, carrot and orange rind.
Add dry ingredients to wet ingredients and mix until just combined.
Bake for 20 minutes, or until tops are firm to the touch, or when a toothpick inserted comes out clean.
Calories140 (most recipes started at 250 and worked their way up)

Since you insist on keeping the raisins, that is a lot of carbs and sugar and calories. I refuse to add protein powder to stuff but lots of people do. You could replace some of the flour with vanilla protein powder to add some sweetness and cut back the carbs and increase the protein. There are a few low carb muffin recipes online but they won't have raisins in them.

I've already been looking... I swear I've looked at every bran muffin from Sparkle to Eggface.

Here is one that looks interesting and if you wanted to up the protein just use half protein powder and half almond flour. You could use SF syrups instead of water to make them sweeter, maybe half water half syrup or make your own simple syrup with some splenda and water. You could add in some raisins and just divide the NUT info by 12 so you know how much extra you are adding to each muffin.

I did this recipe yesterday. Took one bite and tossed all of them in the garbage.
BUT I am going to try the protein thing (and I already use almond flour-ya learned me that already)

I might try adding another t brown sugar splenda, change the lemon juice to lemon zest (gives taste, not quite as tart) and add a T applesauce or two more. I might even add a topping, mix one T brown sugar splenda with a t cinnamon and 2 T finely chopped walnuts in a small bowl, sprinkle on top just before cooking.
Let me know how they taste!

I have a kickass bran muffin recipe that has a very similar nutrient level to yours but all natural sweetners and actual bran not cereal flakes. If you want it I can send it to you. They are to die for but def not to eat very often. When I make a batch I keep 2 and give the rest away immediately.
