protein pancake?
I don't have the recipe but I know its cottage cheese pancakes, which sounds gross but they are great. You can look onthe internet for low carb cottage cheese pancakes and then just use egg beaters and splenda and your good to go. I found some whole wheat, flax seed waffles in the freezer at the grocery store and they are so good! I think they have like 5 grams of protien and I add some PB2 to them to up that. 2-3 beaten eggs
1 cup cottage cheese
Honey or a couple of teaspoons of sugar, to taste (a banana will make it naturally sweeter)
1 cup uncooked oatmeal
Optional, highly recommended ingredients:
banana
a sprinkle of cinnamon
a splash of vanilla
Grab your handy blender and dump the ingredients in, in the order they appear (otherwise the mixture will get all chunky). So, eggs in first, then start the blender. As it's blending, pour in the cottage cheese, then the banana if you're using it, then whatever sweeteners and spices you like, then the oatmeal. Once this is nicely blended, cook as you would pancakes, in a nonstick pan over medium-low heat. I love these plain or with fruit, but you can put syrup on them too, just like regular pancakes.

Apple Topping
Ingredients
1 Apple~cored, peeled and chopped
A dash of Cinnamon
Splenda~Sweeten to taste
A Splash of DaVinci Sugar Free Caramel Syrup
Directions
1)Put peeled, cored, and chopped apple in a bowl and toss with Cinnamon and Splenda (if desired).
2)Microwave for 3 minutes, or until soft.
3) Too easy!
Cottage Cheese Pancakes
Ingredients
¼ cup cottage cheese
2 Tablespoons oatmeal
1 egg
1 packet of Splenda
Splash of Cinn-a-bliss (pinch of cinnamon may be substituted)
Directions
1) Grind oatmeal in blender/magic bullet
2) Add cottage cheese, egg, and Splenda, and Cinn-a-Bliss
3) Mix thoroughly in blender/magic bullet
4) Let sit for several minutes for air bubbles to escape
Makes 4 silver dollar pancakes or 1 large pancake.
thanks! I suppose I could use egg beaters too? I don't eat real eggs. and would splenda work? I bought splenda(granulated) it measures just like sugar. COuld I use the davinci SF vanilla syrup, or just vanilla extract?
Will this work in my smoothie blender or do I need a real blender? My smoothie blender is about the size of a large magic bullet cup.

1/4 c cottage cheese
1 T rolled oats
1 T whole wheat flour
1 egg (or egg beaters)
Whiz up in a blender...use a low to medium heat griddle and keep them small and thin...sometimes I add pecan pieces or little bits of apples, or some banana...maybe a little splenda brown sugar....might take a couple batches to perfect.....
I also use them as little flatbreads--put a little deli ham and cheese on them and let the cheese melt and fold over....some SF raspberry jam and ham is very yummy....
Use your imagination! I sometimes make a big batch and them use them throughout the week.
THey reheat pretty well.

had no idea what i wanted for dinner, i bought some awesome organic sf syrup, it tastes like heaven, I just wi**** was a little thicker....
but these pancakes were great!
Cottage Cheese Pancakes
Ingredients

1/2 cup Cottage Cheese
1 Egg
3 Tablespoons Whole Wheat Flour (I use Arrowhead Mills Multigrain Pancake Mix)
1 Tablespoon Sugar Free Pudding Mix, dry (vanilla, lemon, banana, chocolate, whatever flavor you want depending on your mood.)
She's done this pancake a million different ways with different toppings, so it's always worth checking out!
Also, if you want to up the protein even more, you could add a scoop of protein powder into the mix. You might have to thin it out with a bit of milk, but it'd make it even more protein-hearty!
