Pam, I was actually thinking of you yesterday when I made an open faced ham and cheese on an Arnold's Whole Wheat Sandwich Thin. I took a couple of slices of thin deli ham and layered it with a slice and a half of Kraft 2% cheese and melted it in the toaster oven. Yum, yum, yum! I then toasted the other half of the Sandwich Thin and spread the most delicious SF rasberry jam that I got from Netrition. This is the only jam I've found (and I've tried a LOT of them) that doesn't have somewhat of an artificial taste. It is worth its weight in gold!

My favorite way to eat Arnold's is obviously with turkey.  I get the Jenni-O peppered turkey, sliced thick. I do a light toasting on the buns, then add a mixture of mayo and dijon mustard on both sides... add some salad greens and the turkey.  I bet it'd be good with a fat slice of tomato too.  :-)

Love the idea of doing jam on toast so might need to give that a try too.

What flavor bread are you using? The jam on the toasted whole wheat flavor is excellent toasted, because of the nice contrast between the strong raspberry flavor and the nutiness of the toasted whole wheat. Be careful when you toast them, though, because they can get too crisp too fast!

I buy the Whole Wheat because it's got the highest fiber content of the ones I've seen available at my store.  Shari says that Pepperidge Farms (?) has a version that's got better stats, but I haven't been able to find them -- although I haven't looked very hard either.

And yes, I've over-toasted before.  I like mine just slightly toasted - still soft, but with just the tiniest crunch on the outside.

Ate a steak taco from Taco Del Mar (some place that I had never been to that was like Chipotle) with cheese and guacamole.  It was heavenly.

I had 1/2 cup grilled chicken fajitas with onions and bell peppers cooked VERY soft. Had a dollop of Daisy low fat sour cream on top! Hubby made it last night but I had already eaten the buffalo chicken so I saved his fajita meat for tonight.....yummy!

Glass of Crystal Light Peach Tea tonight too 30 minutes after dinner!!! My new FAV!!!

went to Whole Foods and had a salad.

Ate too much, my chest hurt for awhile afterward

I can eat a LOT of salad, it's scary.  I told my nut but she seemed confused.

I can put away a ton of salad too - its all water once its chewed up and in the pouch.  Dont be skeered!
