CARBQUIK TACO BURGER BISCUIT PIE
 

1 pound very lean ground turkey
1 cup shredded 2% cheddar, colby or jack cheese
1 c. skim milk
1/2 c. Carbquik
1/2 c. egg beaters
1/3 reduced fat parmesan cheese topping
1/4 onion, diced
3 tbsp taco seasoning
8 oz  can Mexicorn (corn with diced peppers)
tbsp onion powder

 Preheat oven to 400 degrees
1) Brown turkey and onion. Drain and add taco seasoning and a little water and let it cook down. Add corn.

2) In a bowl, combine Carbquik, milk, parmesan cheese, egg beaters, onion powder.

3) Spray 8x8" casserole. Spoon meat mix into bottom

4) Top meat mix with the cheddar cheese

5) Pour biscuit mix (will be very runny) over cheese evenly

6) Bake 25 minutes at 400 degrees ****il browned)

   Makes 6 servings

I adapted Nik's carbquik pancake recipe to make it just a single-serving batch.  Plus I don't like normal maple syrup (sugar free or not)... so I do a blueberry "sauce" on top.  If ya'll haven't seen Nik's pancake video,check it out!


Carbquik Blueberry Pancakes
(Pam's modified version of Nik's creation)

1/3 c. Carbquik Baking Mix
2T no-sugar-added applesauce
1 capful Divinci SF vanilla syrup (in the coffee aisle)
1T Splenda
1 egg
fresh blueberries

Mix all ingredients except blueberries. The mixtures should be very thick. In a hot skillet spritzed with cooking spray, drop mixture into small pancake medallians. Immediately plop some fresh blueberries on top of these pancakes and shove the blueberries down into the mix. Flip when ready. Serve with blueberry sauce or SF maple syrup (I don't like syrup, so I use the blueberry sauce instead).

Blueberry Sauce
1/2c frozen blueberries
2T Splenda

Mix together and microwave in small bowl for 1 minute. Stir and smash the blueberries with a spoon. Use instead of syrup on top of pancakes.

Chocolate Chip Biscotti (means twice baked)

3 C Carbquik
1/2 C Butter, softened (1 stick)
1 C sugar (used substitute)
3 Lrg Eggs, room temp
1 tsp Vanilla Extract
1 C mini semisweet chocolate chips

Preheat: 350*

Grease Cookie sheet
Mix butter and sugar until fluffy. (I use my kitchenaid stand w/ whip)
Add: Eggs and Vanilla
(changed to beater) Beat in Carbquik and choco chips until combined
 
Make two mounds (loaf) about 12" long. Give plenty of room to spread. You may need 2 sheets, I got by with one.

Bake for 25-30 minutes.
Remove and cool for about 20 minutes

Cut (I used a pizza cutter) in 1" sections, and put cut side down.
Bake another 8 minutes.

They are good. I didn't do the math, but they are very filling, and with the splenda (I did use regular chips though) wasn't overly sweet. These would be great with a cup of coffee or tea time dunking! Don't see why not adding some protein powder into them.....could easily halve this too! It makes quite a bit.

Ummm...what Pam said and also CQ cheesy biscuits. I modified them from the directions on the package to make them less of a hit on the fats, but they taste JUST like those biscuits from Red Lobster!

The ingredients I use:

2 c. Carbquik
2 tbsp + 1 tbsp Blue Bonnet Light (the 1 tbsp is optional but if you like to bru**** over the top)
1/2 c. 2% cheese
pinch of salt
1/4 c. 0% Greek yogurt
As much water as it takes to make it the right consistency

The stats for the whole thing: 835 calories, 58g fat, 102 carbs, 84 fiber, 56 protein

Depending on the size you make them, the yield differs. I generally get about 14 or 15 biscuits out of the deal. Based on 14 the stats would be: 60 cals, 4g fat, 7 carbs, 6 fiber, 4 protein.

So there are better things one can spend 60 calories on but when you want a cheesy biscuit, you want a cheesy biscuit and these do the job.

My favorite thus far is the cheese biscuits on the CQ package.  Admittedly I have not played around with it that much other than the pound cake fiasco which I have not attempted again.  I plan to do some experimenting when it finally cools off here.  I'm just not one for baking in the summer, rather be outside basking in the sun!  I have the stats for the original recipe from the box (sorry but I don't skimp on butter....eff the cals lol).  ETA: Here are the stats for 1 large (cathead for those who wonder what it's called) biscuit:

Zucchini muffins:  I adapted this recipe.  They re-warm wonderfully in the microwave.  One is very, very filling.

 Zucchini Muffins with Pecans
(Makes 12 small muffins, recipe adapted from Zucchini Muffins at Simply Recipes.)

1 egg, beaten
1 tsp. vanilla
1/2 cup Splenda
1/4 cup Agave nectar
1 1/2 cups grated zucchini (squeezed, then packed into measuring cup)
1/3 cup canned pumpkin
1 1/4 tsp. baking soda
pinch of salt
1 1/2 cups Carbquik
1 tsp. ground cinnamon (I used a generous rounded teaspoon of cinnamon)
1/4 tsp. ground nutmeg
1/2 cup chopped pecans

Preheat oven to 350F - 175C. Grate zucchini by hand or using a food processor, then gently squeeze grated zucchini to remove some of the water. Measure 1 1/2 cups (packed) zucchini for this recipe, and if you have extra, freeze it for another time.
 
In a medium-sized bowl, beat egg, then add vanilla, Splenda, and Agave nectar and mix to combine. Stir in the grated zucchini, then the oil. Sprinkle baking soda and salt over the top of this and mix in.

In a smaller bowl, combine white whole wheat flour, cinnamon and nutmeg. Stir dry ingredients into the zucchini mixture, then fold in chopped pecans.

Spray muffin pan or individual muffin cups with non-stick spray or vegetable oil, then divide batter evenly among cups to make 12 small muffins. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. (I baked mine exactly 30 minutes to get the nicely browned color in the photo.) Let muffins cool a few minutes in the muffin tin or cups, then remove and cool a few minutes more.

Muffins can be eaten warm or cold, but I like them best warm, and I've been microwaving them for about a minute to reheat.
 Per muffin- 117 calories, 8g fat, 14g carbs, 7 g fiber, 4 g protein.
