The way I understand it is WHITE carbs make your blood sugar climb up steadily because your body reacts as if they are sugar..and when you reach the end of the carbs your insulin is still high and your blood sugar falls quickly and radically...leaving you in a carb/insulin coma.

Your body turns bread,pasta,rice..into ready energy and sugar..

Is that the answer you're looking for? Because not all carbs are bad like that..fruits and veggies contain fiber that makes them harder for the body to digest and get the sugar reaction..those would be low glycemic carbs..

Yes, RNY worked for me but it also requires a lot of work from me!

Dawn's right. Simple carbs turn quickly into glucose and can spike your blood glucose levels too high. Whereas complex carbs take longer to digest and the conversion to glucose takes longer so you don't have a spike in blood levels.

However, simple carbs don't generally cause classic dumping. It can cause delayed dumping (or late dumping as it's called) which can be similar to a reactive hypoglycemia crash.

About 40% of the enzymes needed to break down and digest simple carbs is found in our saliva. So by the time a slice of white bread or saltine crackers or pasta reaches your pouch, it's already almost halfway digested and being converted to glucose for energy.

Carbohydrates are just long chains of sugar molecules.  They break down easily into sugar so they can cause dumping.  I get some dumping when I eat certain carbs.

Simple carbs are loosely bonded and break down fast.  These include almost all white starches like bread, rice, pasta, potatoes, etc.  They begin breaking down in your mouth and are more likely to cause dumping

Complex carbs are more rigidly bonded and break down slower so may not cause as many problems.  These include most natural  and non-white starches like beans, whole wheat pasta, brown rice, etc.
