Homemade protein pancake trial run

I can't find the original post or I'd have just posted in it, but wanted you all who saw the original recipe to know that I gave it a whirl tonight.  UMMM....The recipe says it makes 2 pancakes.  In actuality it makes 2 GIANT pancakes.  I'd actually put it in the realm of a crepe; an eggy , spongy crepe.  I could see it maybe working with some cheese and fruit or something but as a substitute for a full fledged real pancake...not so much.  Here is a picture of 1 of the pancakes made.  Yes that's a salad plate it's covering.  If anyone else tried this and had better results I'd love to compare.  As for me, I guess I'll stick to the cottage cheese version or just skip them all together.

Not my recipe.  It's one of Eggface's recipes.  It's pretty good as a substitute, but some time I think I'll just factor in a day where I eat a real live regular pancake (homemade and high fiber) into my eating plan.

I LOVE Rick's Primal Pancakes, I add protein powder to the recipe to jack up the protein content.

Rick's Primal Pancakes

 
  • 1 Egg
  • 1/4 cup Almond Meal
  • 1/4 cup of Coconut Milk
  • 1/8 t Cinnamon
  • 1/8 t Vanilla Extract
  • 1t Baking Powder
Mix it all together until a batter forms. Pour the batter onto a buttered or greased skillet. Cook over medium heat until both sides are golden brown. Serve with berries. Makes one serving.

I usually add 5-6 Toasted Pecan halves to the batter (toast them in a skillet first and then crumble them) - Yummy!!!! When I use pecans, I sometimes substitute maple extract/flavoring for the cinnamon and vanilla extract.
[EDIT] The original pancakes WERE a bit on the thin side, but the baking powder that I added to the recipe above took care of that!
