French Toast casserole was the bomb!!!

Had to take something to a Maundy Thursday Brunch other than an egg casserole (they had lots of them already)  So I modified my old stand by French Toast Casserole and it was great and people loved it!  (they didn't even know all the changes I made)


Mix together:

The equivalent of 8 eggs (I use an equal mix of egg beaters and real eggs
1 cup of Light Vanilla Soy
1/2 cup of Splenda
1/2 cup of SF Maple Syrup
2T vanilla cinnamon (Tupperare product)
2 scoops of Isopure Vanilla protein powder 9Mix with a little water until smooth before adding into the above)

Add:

About a half loaf of whole wheat bread cut into bite size pieces

Put in a rectangular cake pan sprayed with Pam.  Top with small dollops of whipped fat free (or non whipped - both work) cream cheese so there is about one lil dollop for each piece.  Sprinkle top with more vanilla cinnamon.

Put in frige overnight.  Bake next day at 350 for about one hour or until top begins to brown or inserted toothpick comes out clean.  Can be served with SF syrup on the side.

Note:  Yes my plan allow bread at this point and I figure with all the extra protein I added I made a pretty darn good breakfast item!  Hope you enjoy it if you try it!

Gosh that sounds good. Might try it tomorrow for the boys. I'm allowed small amounts of bread just now. I'm almost 4 months post op. But this wet It should be just fine anyway. And sounds pretty loaded with protein.
