Taco casserole...for the WIN!!!!

Just so you know, my non-op family likes it on nachos. I eat it by itself with a big dollop of unflavored Greek yogurt and salsa on top. NOM!

But wait until you see what I have in store for you guys this week!

I almost licked my computer screen that looks so damn good!  I made your taco casserole pre-op and it was a huge hit!  My husband loved his on some flax seed tortilla chips.  I want Mexican sooo bad right now!  Next week when I graduate to soft foods I'm debating making some pork carnitas with refried beans.  The pork is so tender my daughter could eat it before she had teeth lol.  I think that's a pretty good gauge to see if it's soft or not.

I just finished reading about these on FB.  I have been wanting Mexican food I'm definitely going to have to get the ingrediants and try one or more of these. 

Nik, do you know if/how it freezes?  I'll be the only one eating this, my boys are way to picky to eat what I like.

I have a Food Saver system so that's how I store things nowadays. Before that, everything froze wonderfully. For the taco casserole, I'd suggest putting it in the fridge overnight and then slicing, wrapping and freezing. Much less mess and fuss.

I would not try to freeze the enchiladas but the Mexican lasagna freezes fine as well.
