Heading off to the store in a bit to pick up eats for the week.  Hubby and I are bored out of our minds with the same old/same old stuff.  So....what's in your grocery cart for this week?

For dinner today I had some baked talapia with lemon and a couple of slices of tomato and about 1/4 cup of creamed corn.  I get bored with the same old stuff too so I'm going to watch your post!

I had a protein shake.......yawn.  But, for my hubby (who is dieting) and our daughter I made a low carb pepperoni pizza.  I used the Atkins All Purpose Baking Mix for the crust, added low sugar pizza sauce, mozarella and turkey pepperoni.

1 cup Atkins All Purpose Baking Mix
1 Cup Water
1.5 TBS Olive Oil
Pinch of Salt
1 Packet of Splenda
1/2 cup of Harris Teeter Pizza Sauce
3/4 cup Part Skim Shredded Mozerella
15 pieces Harris Teeter Turkey Pepperoni

Mix Baking Mix, Water, Oil, Salt and Splenda in a bowl.  Form dough into ball.  Put dough onto greased pizza pan and spread evenly to the edges using your hands or a rolling pin.  Poke holes into middle of the crust so it doesn't bubble up.
Bake crust for 10 minutes at 425 degrees.  Add pizza sauce, cheese, pepperoni and any other toppings you would like to crust.  Put back in the oven for 20-25 minutes until cheese is golden brown.  Slice into 8 slices and enjoy!

Total: 999 48 59 91
Per Serving: 125 6 7 11

My husband is incredibly picky and said it was really good.  Our daughter who normally hates pizza ate an entire slice.

Thanks for the suggestions! I ended up getting a rump roast and assorted pork chops along with some fresh veggies. Since we had a crazy cold front come through yesterday the pot roast really hit the spot with mushrooms, onions, garlic, green beans, etc. It's been a while since I've splurged on one and it totally hit the spot today. I'm thinking of mixing shredded zucchini, summer squash, and carrots together with some chicken and a little alfredo sauce later this week. School and the heat just seem to have sapped my creativity lately.

Pot roast was simply sprinkled with Montreal seasoning and topped with garlic and onion slices and left to crock pot for a few hours. I tossed in the veggies in the last couple of hours to soften them up and the whole thing was FANTASTIC!

edited to say how I prepared the pot roast.
