I have made white chili, with canned chicken, beans, chichen broth, and seasoned to please, topped with sour cream and cheese.  Delic....

I was also wanting something crispy that I could dip in something.  I made cheese crisps (baked cheese, cooked at 350 till crispy) used hummus as my dip, think I just found my favorite new snack!!!

Try some sugar free popscicles.  They seem to get me through the hump.

Good luck!

I'm  a bit late to this posting - had a long day yesterday - but here's some suggestions:
tuna casserole (pouch tuna, cottage cheese, garlic powder, cream of chicken soup & sharp cheddar cheese - bake until melty and is yummy with an insane amount of protein!)

refried beans or bean dip (make yourself b/c you never know what places put in theirs)

plain greek yogurt (mix in some splenda & s/f jelly - again, tons of protein!)
