Shepherd's Pie substitutions?
Not really the right time of year because it's getting so warm, but since I'm going back to school next week, I need some stuff that can be frozen and pulled out as needed and Shepherd's Pie would be a good one. Does anyone have a recipe that they love? Suggestions to replace the potatoes on top? Turnips maybe or something else?
I use minced turkey( or chicken, lean ground beef), add some pinto beans a low fat low carb gravy mix if I dont have any beef broth,onions, leeks,mushrooms and peppers cook the turkey then add the vegies and gravy, then cook the cauiflower drain it very well mix it up with a tablespoon pf low fat sour cream and low fat cheese as much as u would like and bake it till it is golden brown ......
Okay,, I made this for my hubby 2 weeks ago.. I still use mashed potato but mix it with lots of and parsley, chives, greek yogurt, non fat milk, Light Smart balance, garlic and onion powder, salt pepper,..Ground beef/lamb or turkey, mushrooms, celery, onion, Carrot, tomato paste, worchestire, HP sauce,.. I put meat mix i small pot pie pans, freeze for 20 min then layer on the mash on top. Freeze then reheat..
Racheal Ray hsa a recipe for meatless shepards pie and she uses parsnips for the topping. she also has one using turkey and sweet potatoe topping. you can view these at www.foodnetwork.com. you can do search for Raceal Ray and shepard's pie. It looks fabulous Ihave yet to try it. the meatless one uses portabello mushrooms.
