Shepherd's Pie substitutions?

I use cauliflower, greek yogurt, and a few tablespoons of instant mashed potato flakes (adds a little bit of carbs, but totally makes it taste yummy - and the greek yogurt adds extra protein!)

I've been picking up little pyrex ramekins at goodwill and other places I can get them cheap - I make a bunch of little ones (you could use mini pie tins too!), toss them in the freezer, and pop one out in the morning - reheat it at night - dinner with no cooking!
