can I mix unflavored protein powder with V8?
Even if it says "mix with anything" some protein powders are milk based and wouldn't taste very good mixed with "anything". I have one from GNC that is milk based and it's FABULOUS with hot tea (I love milk in my tea) or soups, but I can't mix that one with Crystal Light or juice of any kind.
And count your carbs - I try not to go over 15 carbs in a meal or a drink. But I'm on week 8 and cannot have ANY fruit or vegetable juice, per my NUT. That being said, I count whatever I put my protein in as part of my liquid if it's not something like soup mixed into a recipe. It IS part of your liquid if you're mixing it with something liquid, I think!

Protein powder in V8 sounds absolutely disgusting to me, but I see no reason that you couldn't do it if you can actually drink it, LOL! Even people who dump do not generally dump on natural sugar... and according to the label on my bottle of regular V8 there is no added sugar, so all the sugar must come from the veggies (the beets, I'm guessing) and shouldn't cause a problem.
Keep in mind the high sodium content, though. (I don't personally worry about one item with high sodium, but I know some people do.)
Yes, V8 would count towards your fluids. Some surgeons tell people not to count protein shakes as fluids, but they ARE liquids, so I have no idea why....

You don't drown by falling in the water. You drown by staying there.
I decided to try it. I mixed 1 tbs. with 2oz. of V8. I can't really taste a difference! If I were to drink 8oz with a scoop of the protein powder, it would be 27g of protein. If I mixed it with 1%milk, I would have 35g of protein so I don't think I'll be doing the V8 protein shakes very often, but I'm glad to know that when I get sick of the sweet shakes, I can have a V8 shake either cold or warm. It kind of reminds me of a better tasting tomato soup.

V8 with protein powder was on our approved list pretty early out. Nothing wrong with it and it gets you away from all the sweet stuff if you need a break from that.
