Summer vacation food

I'm renting a beach house at the Jersey Shore for a week this summer, and I'm worried about my first post-op vacation experience.  There's a whole lot of boardwalk food that I can't eat.  I'm looking for fun, summery recipes that might help me feel a little less deprived while we're there.  Does anyone have anything good?
