First off, I will comment on what labs you do have since you are missing the majority of what needs to be done at one year out.
You definitely need more iron although your actual iron level is good and the sat % is good but your ferritin is really low. You say your doctor is increasing your iron to 3 times per day? What type of iron and what dosage? IF it has ferrous in the name, dont' bother - you won't absorb it and it will constipate you like crazy and upset your stomach. For those of us with gastric bypass, you want to take carbonyl iron - available at vitalady.com called Tender irons - they easy on the stomach, non-constipating and highly absorbable. They even have the necessary vitamin C in them to help you absorb them even better. They are 60mg capsules and if your doctor wanted you to take 3 irons per day, I would recommend you take 3 of these per day. This is actually what my NUT starts patients off at. Some people need to take up to 5 per day. You don't have to take them in 3 separate doses, you can take them all at one time just make sure you take them atleast 2-4 hours away from your calcium and thyroid medication.
Your doctor basically just did a CBC and metabolic panel. You need to get alot more than that done - B12, folate, B1, B6, E, K, copper, selenium, zinc, magnesium, PTH, vitamin D, phosphorus, TSH,
