I am almost 7 months out and can eat anything except high sugar stuff.  Just wondering what you have found that hit the mark for the following:  (and won't break the wallet as the special low carb protein snacks do!) 

sweet with a cake-like texture

sweet like a cookie

 Skinny Cow sugar free ice cream sandwiches.  OMG!!  Heaven!  They are like cookies and ice cream, and they don't even leave that funky after taste.  But it's ice cream, so you have to like that.

Fiber one bars have good calorie/carb counts and are sweet and good texture, more like a cookie. 

Angle food cake with strawberries that have been sprinkled with splenda.  Don't eat too much of the cake because it is not sugar free, but it is low in sugar so a small slice won't hurt.

Sugar free angel food cake is actually really good. Hard to find sometimes, but really good.

 Oh, is there sugar free angle food cake?  I have never seen it, but I did try regular angle food cake and it is pretty awesome not too sweet and good texture

For sweet and cake-like, I might do a sugar free or low sugar muffin.  I've made sugar free applesauce bread from scratch a few times.  I did bake a sugar free cake once recently.

For sweet like a cookie, sometimes I eat a cookie, as long as it has no more than 12 grams of sugar in it.  A couple times I baked sugar free homemade cookies.  Oh, and sometimes I put protein powder in stuff I bake.  Sometimes instead of a cookie I do a protein bar.

For crunchy and salty, sometimes I do nuts.  Sometimes sliced raw cucumber with salt.  If I could eat just a few, I'd do some sort of cracker like wheat thins but I'd have the whole box gone in two days so I don't buy them.

There is a recipe floating around for shake cake.  Made with protein powder.  I undercook it just a little and it tastes like a lava cake.
For a cookie there is a low carb peanut butter cookie recipe around here.  I just received my Quest bars in the mail and I heated the vanilla almond crunch one in the microwave and it was really good.  I have eaten a lot of protein bars and this is probably the closest I have found to a cookie.  Low carb, too, and high in fiber, which I really need.
Crunchy and salty for me?  Nuts and popcorn are my go to.  Pork rinds are low in carbs and high in protein.

Oh good Taz, you mentioned pork rinds, I eat those too sometimes and I did not really know if that was good or not.  I just looked at them and saw they were low in fat, no carbs good protein and were the closest thing I could get to a chip.  But more then 2 or 3 and they hurt my tummy

For me, Baked Lay's fill the crunchy & salty bill. So nummy and far lower in calories than regular chips. I agree with the others about the Skinny Cow products - so good!
