My new favorite thing... flourless crepes!!!! YUM
So last week I found a great recipe for flourless crepes... they are made with ricotta.
My husband made me a double batch of them and put them in a ziploc baggie in the fridge. I enjoyed all kinds of combinations this week filled with protein.... Had them for breakfast, lunch and sometimes dinner.
Filled them with ricotta cheese flavored with different davinci syrups, fresh fruit, and some savory ones filled with turkey bacon, cheeses, and sauteed veggies. Yummmo. I even used one this week with a mexican chicken filling, instead of using a tortilla and a spaghetti, meat sauce and ricotta like lasagne...Ive been bored lately with my food choices, and this was a great way to shake things up a bit!

Ingredients:
- 2 Eggs or equivalent Egg subsitute
- 2 Tbsp Ricotta Cheese
- 1/2 tsp Vanilla Extract (optional)
- 1/2 tsp Splenda (optional)
Directions:
- Beat the eggs and blend in the other ingredients.
- Spray an 8" omelet pan w/ PAM and preheat.
- Pour mixture into pan and allow to set as you would an omelet.
- Flip over once and continue cooking until no longer runny.
- Serve with a thin line of ricotta down the middle and fresh fruit and fold over.
