Breakfast bake???
One of my faves is one I tried by making it and taking it to work. It lasted
about 10 minutes, so by all measures was a huge success. Nobody
had any idea it was wls friendly.
French Toast Casserole
I tore up low -cal whole wheat bread (45 cals a slice), poured egg mixture
over it (eggs, vanilla protein powder, cinnamon) and drizzled sf maple
syrup lightly over the top. I baked it and it was super delish.
My second breakfast casserole (again work tested) was beaten
eggs or egg beaters poured over shredded sweet potatoes, diced
sweet red peppers, diced zucchini and chopped garlic and onions
. I sprinkled low-fat cheese on top and baked it. You can make
any number of variations of this with different veggies, sausage,
. feta cheese, salsa etc
