The s/f pecan pie is FABULOUS.  It's the same one I posted below (maybe altered to our liking slightly).  I always add more pecans it's not enough without more :).

If you can find or order the Steel S/F Syrup it is definitely better with this one then a store bought S/F syrup.

 Ladytazz,.....LIke Dana said....it is AMAZING !!!  It would be better with a few more pecans.    Now that being said....it is NOT exactly like a regular pecan pie but trust me it will curb your cravings for pecan pie.

Peanut Butter Cookies:

1 cup natural peanut butter (I like the freshly ground from Whole Foods)
1 egg
1 cup Splenda
1 tsp vanilla extract

Preheat oven to 350 degrees. Mix all ingredients in a hand or stand mixer. Use a cookie scooper to scoop equal sized balls onto an ungreased cookie sheet. Dip a fork in Splenda to create that criss-cross pattern that peanut butter cookies are famous for!

Bake for 12 minutes. They won't look done, but trust me they are. So yummy fresh out of the oven with a glass of fat free milk!

This sounded so good but I didn't have any peanut butter but I had some fresh ground almond butter, not quite a cup.  I also had some roasted, unsalted almonds I was going to use on a recipe but didn't so I ground some of those up and added them to the almond butter with some sugar free Torani vanilla syrup, added an egg and a cup of Splenda, plus 2 scoops of unflavored whey isolate.  I mixed it all up with a mixer, made them into cookies and cooked at 350 for about 13 minutes.  Yummy, they came out great!  They reminded me of the almond cookies I used to get with Chinese food when I was a kid.  I am going to take the rest of them with us for Thanksgiving.
