So I have this fabulous idea for dinner... I'm going to make a crust-less quiche filled with ingredients found in Chili's Southwestern Egg Rolls and I'm even going to attempt to make an avocado ranch sauce to go with. Sounds good. I'll be back to report how it tastes. P.S. Totally it's totally healthy and protein packed. With sauce and garnishing tomato and green onion, we're talking 263 cal/21 protein! I'll be sure to report back on how it tastes and a recipe if it's good enough to share! :)

OOOOOhhhh, that sounds yummy!  Please share if it turns out tasty.  I'm pre-op but have
been compiling a notebook with recommended snacks and meals.  I think it will help me plan
better in future days to come.

Today, I found a Taco Soup recipe (no chips) that I used to make.  I'm going to take it to
my next visit to the dietitian and ask her to evaluate it.  Originally, the recipe called for
round steak, however, I've substituted chicken or ground sirloin.  And it makes a HUGE
pot so there's plenty to freeze!

May I ask where you found the stats for your recipe? I made a taco quiche a few nights ago that was fantabulous but I have been unable to find a recipe builder that can give me protein and calorie info.
