 I worked in a detox for a while as a young nurse. I used to make killer grilled cheese with goverment cheese and govement butter and used bread from the used bread store.

Oh, boy, can I relate. I made a sauce for enchiladas for hubs and crew with Rotel and Velveeta. It looked so good. I ate a very small bite of the sauce. Surpise! It didn't taste as good as I thought it would. The texture was...hmm, off, I guess.

They loved it, but I was really happy to discover that it wasn't nearly as fabulous as I thought it would be. That, and I didn't dump, which would have been an unpleasant consequence to my impetuous bite.

MMMMmmm - velveeta! Do you know that velveeta has a reduced fat version that tastes pretty good! I occasionally make these things my gramma used to call pizza burgers... it's sloppy joe with velveeta in it. I don't eat bread right now because it just doesn't go down yet... but I allow myself a serving of whole grain crackers and place a spoon of the pizza burger mix (I use ground turkey) on the cracker and top with a piece of cheese and then pop them under the broiler for a few seconds.. they taste great!

ok..i had a comment on the velveeta..but after seeing the comment on gubment cheese..i lost all train of thought..roflmao   i do remember trying to cut that stuff...hard as a brick but it seemed like it lasted forever ...

 Yeah and your mom never had a nice, big kitchen knife so you were always trying to cut it with a butter knife. I clearly remember one time standing on a stool and having to press down HARD on that sucker!

I make nachos too, however I use ground beef as well. Basically group beef, la victoria bottled hot sauce, black olives, and melt the cheese on top. Not only does it taste yummy, they are really filling. I made a whole bunch for me and hubs and we couldn't finish them. It might be worth a trial run, maybe make those as well as the velveeta kind. Food for thought,  PS the hot sauce is mixed into the beef, not poured on top.
