When you are cleared for beef, you can eat it any way your body will tolerate it. I really like bison. It's lean and great flavor. We also eat venison.

I do burgers a lot. Homemade are the best. I'm very picky about my ground beef. It has to come from a certain store only and it has to have never been frozen. That makes a HUGE difference. I shape them with straight edges and the middle of the burger is a bit thinner than the edges. I only flip them once so I make sure one side is cooked before I flip if, cause once I do I will not flip it back. I also only cook them on cast iron.
By making them thinner in the middle they will swell up in the center. If you mash them then you lose the moisture. So I just make the center a bit thinner and let them swell up. I put the bacon and or mushrooms on it then the sliced cheese to melt over everything and help to hold it all on the burger. I serve it on a plate like a steak with sliced tomatoes on the side with some ranch dressing or yogurt drizzled over the tomato slices.

With the loss of so many of our beef herd to drought and the corresponding high beef price, I'll be sticking to my ground turkey. I love beef (don't know if I can tolerate it yet), but I am not willing to pay $5 a pound for extra lean even though I know it will last me so long now. My surgeon cleared me for all but fresh fruits and veggies at 15 days out. Well, ground meats are ok, I doubt I would try steak at this point.
I hate fish but am going to try it tomorrow, a mahi mahi broiled with some lemon, salt, and pepper. I am also going to do a turkey in the crock pot for Monday.
