Ok, so last night I went to my support group meeting & we had a dietitian & sort of a cooking demonstration. They made Kale chips. They were actually pretty good & I can see them satisfying the crunchy texture needs that some of us need. They kinda taste collardish to me. Seemed pretty simple to make, although I suggest using the olive oil spray vs the oil itself, less messy. Thought I might share in case some of you would like to try this out.

Total Time: 45 min
Prep: 25 min
Cook: 20 min
Yield: 4 servings
Level: Easy

Ingredients

  • 1 head kale, washed and thoroughly dried
  • 2 tablespoons olive oil
  • Sea salt, for sprinkling

Directions

Preheat the oven to 275 degrees F.

Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

I used to make kale chips before my surgery and I didn't like them plain (with only salt).  So I started roasting garlic and mixing that into a little salt and extra virgin olive oil and brushing it on each leaf then baking.  They were delicious!

I might have to experiment with more ideas -- maybe come up with a sour cream and onion flavor or BBQ flavor.  *thinking*  You've given me a task!  Thanks for sharing.
