The summer before my surgery I flew to Europe and back, literally wedged into the seat, with a seatbelt extender, without the ability to put the tray down even CLOSE to horizontally because of my belly (I couldn't even use it to set a drink on, let alone a tray of food!), and with my arms completely hanging over my seat into the aisle and into the seat next to me.  It was not the first time I had flown, but it was the most uncomfortable flight of my life.

The next time I flew, I was at my goal weight (but was still completely annoyed by the security procedures and asinine restrictions on liquids in carry-on bags!).  I cannot even describe my shock at discovering that there was actually EXTRA room in my seat!!!  Interestingly, though, although the tray table went down without touching my body at all, it was still awfully close to my (nice-and-flat) tummy since there was so little room between my seat and the seat in front.

I identify.  Just returned to Maine from a trip to Colorado, and I didn't need a seat belt extender.  In fact, I had over 6 inces to spare. I could find the place to plug in the earphones by leaning forward and seeing it, not just feeling for it with my fingers. The tray was at least 4 inches from my stomach.  And the seats were actually comfortable.  Obviously these are some of the new, simple joys of our new life.  Sorry about your continuing claustrophobia -- but at least you were more comfortable physically, right?
