Nik-palooza

So today I went to the grocery store and made the shareholders very happy.  Then I spent the day in the kitchen, multi-tasking in ways I never knew I was capable of and let me tell you - when it comes to meals for the next while I am SET!!

2 batches of Taco Casserole
1 Nik's Chicken Pot Pie
12 BF Mexi-Cali Meatloaf (mini - loaves)
18 or so Magic Meatballs (1st pan ready to go in the oven here)

I have the goods to make noodle-less lasagna and Cheesy Chicken  Broccoli and "Rice" casserole, but I just ran out of energy, inspiration and time!

Don't judge.... your kitchen would be a disaster after Nik-palooza  too!!!

LOL
Well, I m all about convenience for my meals when I take my lunch break at work to go help my mom - has to be fast for me to even consider it, and filling for it to do any good - these do all of that!
Plus I try to cook once a week or so for my parents, so this way they can just thaw and cook and I can nap instead !!

I am going to the grocery store tomorrow to get the stuff to make the cheesy chicken, brocolli and "rice" and possibly the taco casserole.  Do you think since I'm just 4 weeks out those would be good options for me?  I'm on soft food now whi*****lude soft baked meats and soft veggies.  Your dishes look delish!  Enjoy!!!!

Thank you Nik and Bariatric Foodie for giving us such great ideas!!!

I'm not a real good source for early out meals, but I would think at minimum you would want to peel the shaush and zukes because of how fibrous it can be.

Yeah I've had taco casserole about every other week for the last few months lol
The chicken pot pie is a huge favorite around here as are the meatballs. This is the 2nd time I've made the meatloaves and they are good and filling.

where are you all finding these recipes?  I go to the sites but rarely find what others have found.
