Today I am 9 days post op and I made a zucchini meatless noodless lasagna! It was amazing!! It was so good, my husband loved it! I honestly think it was better than regular. I precooked the zucchini so it was very soft. Tomorrow is my first follow up with the doctor. I tolerated everything I've eaten so far. Hope it stays that way. All it was .....1 med zucchini 1/2large container of ricotta cheese skim, 1 bag of mixed shrd cheese 1 egg and no sugar added spaghetti sauce. Sauce had 5 grams of sugar, but it was natural I checked ingreditents for added sugar and there was none. Was awesome!

How brave of you for 9 days out.  I did one like that and added portelbella mushrooms that were good too.

Wow, I was still on liquids at that point.  Must be nice.  Sounds yummy though:)

I know. It seems my plan moves a lot faster than most peoples on here, buy that was all part of my surgeons plan so I went for it. I'm on smooth consistency right now, I can have cooked vegetables, and cheese so I made sure the zucchini was precooked and very soft. Everything was very smooth and I chewed well. I had no problems with it. My surgeon said their plan is to get us back to normal eating, just better choices and smaller portions, as quickly as our stomach can handle it. Next Tuesday after 2 weeks post op, I start reintroducing regular foods one at a time, starting with ground turkey and chicken then moving to regular no beef or pork for three months.

Sounds delicious! When you get to the point where ground turkey or chicken is allowed, here is my version of noodle-less lasagna. Sometimes I leave it to cool in the fridge overnight and then cut into squares the next day, wrap, and freeze those for pre-portioned meals later. They reheat very quickly!

Mine was very basic and simple... 2 med Zucchinis sliced long in thin strips. Place on baking sheet and sprinkle with seasonings of choice, I used salt pepper and garlic powder. Keep and eye on them pull out when they are texture of choice. I had to have mine really soft for my stage. Mix 1/2 large container of ricotta cheese, 1 egg, 1/2 bag of shrd cheese of choice, and parmasean cheese and spices of choice. Mix all together. Jar of spaghetti sauce of choice. Cover small casserole dish bottom with sauce, lay zucchini to fit, spread 1/2 cheese mixture, spread sauce, more zucchini to fit, the cheese mix, then sauce and zucchinni if any left and top with rest of bag of cheese. Bake 30 mins at 400 degrees
