Tuna casserole

Does anyone have a recipe for low carb tuna casserole?  I really don't want to use shirataki noodles, but the more veggies the better.  Browsed the net and didn't see much that sounded good.

Thanks Nik.  I am going to try the cheesy cauliflower cups today and tuna casserole tomorrow.  Can't wait to try them.  Had all ingredients except TVP, which I have never tried, so this is exciting.  Thanks again.

I haven't tried them yet but Barilla Plus has a noodle that is higher in protein. That might be an option for your casserole. (won't get rid of the carbs but at least you'd be getting protein in too).
