What's on the menu today, RNY-ers?
We are part of the huge national weather system with snow coming at record levels and cold temps falling as I type. My whole strategy is to cook lots of soups, bake a chicken, hard boil eggs (incase the electricity goes out) bake bread, make SF jello/pudding, and draw pitchers of water in case we have 2 or 3 days without utilities. DH is at the grocery stocking up on fruit and veggies and we can light the charcoal grill if we have to. That doesn't really tell you what I'm eating today but basically: tuna salad, left over salmon patties, and fruit.
Salmon patties:
I think you can use 1/2 lb of salmon for 2 to 4 people. I divide it into 6 to 8 patties that fill a medium size skillet. It is a baked patty but browned first in a minimum amount of olive oil.
Fresh salmon is better than canned and you don't have to sort through it to remove the bones. A small amount goes a long way. Remove the skin from the salmon.
I mince or chop it and you can use your food processor. Include the onion and celery if you want a smoother texture.
A heaping teaspoon or your choice amount. Horseradish sauce.
A few dashes of HOT SAUCE
2 eggs for approx 7 to 8 patties.
Lemon juice
Salt/pepper Optional
I do use bread crumbs because it doesn't add that many carbs. I suppose you can do without the crumbs since the egg will hold it all together.
Prepare your oven proof pan with olive oil, heat it and drop the patties to brown. Flip to brown on the other side and put it in a 350 to 400 degree oven. It depends on how fast you want it to bake.
I have learned to measure by sight and smell. Cooking is truly an art for me. If I have a new recipe I will try to follow it the first time through and after that it takes all kinds of twists and turns. Cooking is really built on science but has a gigantic creative side also.
I had a protein shake for breakfast and I'm having another one right now for lunch. I'm not feeling very hungry today for some reason. So I'm just making sure I get my fluids and protein in.
I was gonna make chili for dinner tonight but I'm not sure I'm gonna be in the mood for making it or eating it. If not, I'll have some Greek yogurt.

I'm inspired that five years out you eat so well! I think after a month of only protein shakes, I need a little break. I also love savory food so I am thrilled to have turkey and chicken and the like :) I still have lots of powders and even bottles and cartons of protein drinks so I will see what I can get through and the rest I will give away at my support group :)
I've learned to make really yummy protein shakes and really really yummy yogurt. I am planning to mix some plain Greek yogurt with banana flavored pudding mix and stir in some chopped walnuts and a few chocolate chips. It's Chunky Monkey Greek yogurt. Not quite as good as Ben and Jerry's but really yummy.

Wow! I'm still on a boring full liquids/modified solids. My surgery was 12/19. I'm so ready for some meat! So far B: 2oz weight control oatmeal made with milk S: pure protein chocolate shake. Thinking lunch will be cottage cheese, snack: another shake, D: 2oz mashed potatoes because that's yummy to me. Then snack prob some Mexican tortilla infused chicken broth with 1/2 lemon squeezed in. I have no problem getting fluids in.
