What's on the menu today, RNY-ers?

I am loving these daily discussions of what we are eating - I am getting good ideas and recipes :)  I am already planning some fajitas and some salmon patties (sans breadcrumbs).

And, enough of you posted that it must be helpful for you :)   Since I now meticulously pack my meals, I find I really enjoy the methodical weighing and measuring of my lean protein and then adding spices and flavors.    So here goes...this is what I am eating today and I can't wait to get ideas from what you're eating!  

Liquid diet Dec 2-16, RNY Dec 16, liquid diet until Jan 1 and now on soft and lean foods (chicken, turkey, shrimp, fish). Zero complications. 40 lbs gone in one month. I'm a very very very happy patient! (Other than my lack of bowel movements lol)  

How long since my surgery: 3 weeks

Breakfast: 3 oz of leftover egg white frittata with bacon and goat cheese and shallots   

Lunch: 3 oz Trader Joe's grilled chicken, 1 tbsp canned green chilies, 1/8 cup light shredded Mexican cheese (just nuke this and it's so tasty!)

Dinner: 3 oz chicken breast in balsamic vinegar, shallots, and with .5 ounces of goat cheese

Snacks: I have a pure protein vanilla shake in the fridge, as well as a 100 calorie greek yogurt (vanilla flavor)

Total nutrition information (without snacks): 480 calories, 71 g of protein, 14 g carbs (which are right inline with my daily goals)  

Exercise/Vitamins/Water: 30 minutes on treadmill at 2.7 mph/will be on track with vitamins/at least 64 oz of water

Time passed since surgery: GBP April 2012 (20 Mo out)

Breakfast: One egg white with salsa and habenero jack cheese

Lunch: 2 oz. Qdoba naked burrito (grilled veggies instead of rice) - I get one naked burrito and I can eat lunches on it all week long!

Dinner: 2 oz. crock pot pork butt BBQ no sauce and 1 oz. grilled veggies

Snacks: 1 homemade protein powder fruit leather (tropical mango colada today yummo)

Exercise/vitamins/water: The only exercise I will be getting today will be pacing the floor at hospice. My mother is in her final few hours and so I have not hit the gym in a few weeks :( I do get all of my liquids in as well as vitamins.

I am also really sorry to hear about your mom.  You sound like you are staying strong and making good choices, which is very impressive.

I am also very impressed that you are eating 3 oz. per meal this far out from surgery!

How do you make the fruit leather?  Sounds good.

6 mos post-op

Breakfast-scrambled egg with cheddar cheese and peppers and onions and tomatoes

Lunch-rolled chicken lunch meat, slice of cheese and dill pickles 

Dinner-crockpot chicken and dumplings with mixed veggies. I only eat chicken breast with a little gravy

snacks-1/2 apple, yogurt, nuts

I had a cappuccino protein shake for breakfast and a protein bar for a snack.

Lunch is going to be sloppy joes left over from dinner last night.  Dinner will probably be the same.

Snacks will be corn on the cob (got two ears left I need to eat before they get too old), peaches, and banana flavored Greek yogurt with walnuts and mini-chocolate chips.

That banana yogurt with walnuts and chocolate chips sounds pretty amazing!  I am definitely not where I could eat that anytime soon, but one day :)

Your peaches reminded me I have some snack size bags of frozen peaches I need to use from my freezer :)  I am going to thaw one.  I have the cappuccino too, I burned out on it because I had it so much.  Right now I am into the lemon tea flavor, it is easy to change the flavor with any kind of crystal lite.  (I am also sick of vanilla and chocolate lol)
