Plain Greek Yogurt instead of Eggs or Milk ?!!

I had never thought of this !! Some of you may know, but I thought I'd share with those of you who don't ~ I was looking online for a recipe to make some oven fried buffalo chicken chunks... and came across the one in the link below, and was so excited when they gave the idea to use the plain greek yogurt (spiced up of course) instead of eggs or milk, before you put the breadcrumbs on.... Extra protein yayyyy !!

So obviously this idea can be used in other recipes that call for an egg or milk coating also :)

It might be good for coating foods, but it will not work (except as sour cream) in recipes where the egg is used as a binder, and if used in place of milk may add too much of a sour taste.

I don't mean to be critical, but as far as coating foods, how much of the milk or egg is actually ON each piece of what you are coating?  Answer: Very little.  How much protein are you adding or how many calories are you eliminating by swapping yogurt for milk/egg?  Answer: Again, very little.

Now, if you eliminate the breadcrumbs, THAT might save you some carbs!

Ya know, I was thinking about eliminating the bread crumbs... but hadn't the 1st idea if there was anything I could substitute that is more carb friendly ?? What do some people use instead ?

No idea what you could substitute for bread crumbs.  I use very finely crushed bread crumbs or some panko... but honestly, my original statement was rather tongue in cheek because the amount even of breadcrumbs on a single chicken tender or whatever is negligible, so the only thing I ever worry about eliminating is the frying.

Yeah, I skipped over the recipes that called for pan frying & found one that I could just bake instead.

I use parmesan cheese as a coating with herbs and garlic powder.  May not be good w buffalo style but it is yummy for regular chicken strips/nuggets.

I've used TVP in place of breadcrumbs before for breading chicken. It got a bit soggy in the sauce, but is def worth trying!
