Hi OH Friends!

I know we are spread out all over the world, so I hope you will excuse me for announcing that it's over 60 today!!!! And sunny!!! It feels like a whole new world! Except...polar vortex is creeping back in this week LOL. Oh well, I'm about to go for a hike to take advantage of the weather. [side note: for all you pre-op lurkers, 10 weeks ago I was NOT a hiking kind of gal and would have been on my couch watching Bravo! So if you are thinking "can I be successful and commit to a new way of eating and exercising?" Well, only you can make that seclusion but I did and it's amazing!]

Time since surgery: 10 weeks this coming Monday

B: 2 oz of PF Changs lettuce wrap filling from my freezer. Not enough protein so I just had a Premier Protein vanilla shake (and ordered chocolate ones from Amazon Prime since I'm out)

L: not sure-I will go grocery shopping after my hike so maybe deli turkey with a piece of cheese pan fried to make it into a crust (yummmm and I got the idea last week on this very post!)

D: I'm finally making the turkey meatballs I've been dreaming of all week since a few of you have been having meatballs. Mine will consist of one 20 ounce package of 99% fat free turkey, one egg, 1/2 cup Parmesan cheese, grated onion and maybe 1/4 cup breadcrumbs. Baked in a glass pan in the oven.

E: two mile hike with a friend and her dog. My FitBit will keep me honest!

V: my multi and calcium so far

W: I always get 70 ounces but I am working on upping that!

Whats on your menu today?

Instead of meatballs, I often make this turkey meatloaf, then slice it up and freeze the slices... It is one of my fav meals

Turkey Meatloaf with Roasted Red Pepper Sauce

what you need 2 lb. ground turkey breast (1% fat) 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained 1 pkg. (8 oz.) KRAFT FREE Shredded Non-Fat Mozzarella Cheese 1/2 cup fresh whole wheat bread crumbs (from 1 slice of bread) 1 egg 1 clove garlic, minced 3/4 cup SOUTH BEACH LIVING™ Balsamic Dressing, divided 1 jar (12 oz.) roasted red peppers, drained

make it PREHEAT oven to 350°F. Mix turkey, spinach, cheese, bread crumbs, egg, garlic and 1/4 cup of the dressing until well blended. SHAPE into 9x4-inch loaf in greased 13x9-inch baking pan. BAKE 50 min. or until cooked through (170°F). Let stand 10 min. Meanwhile, place remaining 1/2 cup dressing and the peppers in blender or food processor; cover. Blend well. Cut meatloaf into 16 slices. Serve with the sauce.

Hey Ceithlenn! Your training sessions put mine to shame! Though I did go today at 9 am :) My trainer kicked my ass! I still have knee pain (tore my meniscus 1.5 years ago) and I do wonder if it will go away as I get lighter :)

a local friend from my support group raves about the unwich. I will have to try it sometime!

Pain does get better as we lighten up, at least in my experience. The unwich is great when unprepared but does have high sodium so I try to keep eating it to a minimum.

S: Cocoa dusted almonds & probably some beef jerky later

D: I guess it just depends on where we stop
