What's on the menu today, RNYers? Happy Friday!
Welcome back, Kim! So glad to hear your mom is doing well!
I tried my first Quest bar this week too and it was quite good - as protein bars go that is. I've tried a few that were super gross.

I'm sitting here procrastinating a bit at work. It's the end of the day on a Friday, what can I say?...
So I'm trying to come up with a new recipe to try this weekend and I'm feeling blah about everything I find! I've got ground turkey taco meat, tex-mex turkey meatloaf, and a chicken with green chilies crockpot thing in the freezer and I've been eating those, but I want something different.
Any suggestion on a favorite recipe?! Help!

Ok here are a few ideas:
Buy super firm tofu, press it between a few plates with paper towel on top and bottom for 30+ minutes, then sauté it up with pesto or with green thai curry sauce or some other low carb sauce, and eat it with some cauliflower mash (microwave a bowl of florets with 3:30 minutes then mash with a fork, salt, pepper, garlic
Find some yummy crab and shrimp recipe? Seafood always sits so well with me! I forget, are you close to Trader Joe's? They also sell fish fillets with spices already all wrapped up!
Snow peas seem to be in season. Maybe grill a chicken breast and melt some cheese on it and have some snow peas?
Stop at a greek take-out place and get a chicken kebab wrap and just eat the tatziki, pickles, chicken
Make a mediterranean tuna salad. Buy albacore tuna and mix it with kalamata olives, feta cheese, diced red onion, olive oil, red wine vinegar, parsley and greek seasoning
That's all I got! I was uninspired for a while but last night I went nuts at the local Harris Teeter and got so many ingredients! Let us know what you decide!
Thanks for the suggestions - I was just feeling so...uninspired. I've never cooked my own tofu, so I think I might try that! Though the most ridiculous thing just happened....
I'm all ready to go to the gym and then the grocery store - I've got my water, my list, my bags - I open my apartment door and it literally comes off in my hand! The hinges have totally separated from the jam! So I muscle it into place and call the emergency maintenance line, but he can't come until tomorrow since it isn't a real emergency. Now I don't know if I'll be able to get in and out and if the apartment is really secure, so I don't think I can go out.
Guess I'll be trying one of the Jillian Michael's workouts on Amazon Prime and grocery shopping tomorrow. Who puts up a steel door with 5, 1-inch screws?!

Not being able to close and lock your door securely isn't considered an emergency?? That's a different definition of 'emergency' than I have, for sure!
Surgery: RNY on 12/18/2013 with Jay M. Snow, MD "Don't mistake my kindness for weakness." - Robert Herjavec, quoting Al Capone
Hello to everyone! Seems like everyone is having wonderful weather, I'm a little jealous. Every day seems to be nice in the morning and raining in the afternoons. It better not tomorrow, have a good friends wedding to go to and it's outdoors.
Also hoping the weather stays nice so I can start training. I have a 5K mud run on June 28th and half-marathon run/walk on August 17th. I am determined to do this even if I have the walk the whole thing.
Time since surgery: 11 Years
B: Eggs w/cauliflower "hash browns"
L: Ordered a grilled chicken salad, the lettuce was so brown & wilted that I just ate the chicken out of it.
L2: Quest Bar
D: Cauliflower crust pizza
E: Day off
W: 72oz down so far
V: Done
Hope everyone has a great weekend!
Beautiful day in New Jersey! Bassett Hound, 👍 another Jersey Girl! Great workout day too. Food is going well, a good day. Lots of cleaning planned for tomorrow.
Date night & movie night, NO munching. 👎
