Here's a favorite way of mine. Use any white fish filet -- tilapia, swai, haddock, red snapper, flounder, etc.
Cook some onion in a pan until the onion is soft and browned. Season the fish fillet with salt and pepper and put in a baking dish. Add the onion. Sprinkle top of fish with dill, basil, parsley and lemon pepper. Dot the top of the fish with butter -- just a little. Heat 1/4 - 1/3 cup milk (you can use coconut milk -- I use 1% regular milk) for one or two fillets, and pour hot milk over fish. Bake at 400 degrees for 15 - 20 minutes, depending on how thick the fillets are. Serve the fish with some of the pan sauce spooned over the top -- also good over broccoli and cauliflower. I make this just for me in my toaster oven -- yummy, and very tender, moist fish.
