Good morning. It is not even 40 degrees here. I am bundling up to take my walk. I look forward to days when it is chilly and it makes me move faster.

Damn cold here too, and I do agree the colder it is the faster I walk too, some days I am at a mini run! LOL Stay warm, enjoy the fresh air! I love cabbage rolls have not had them in years and years and don't eat them now due to the rice as rice does not sit well with me!

I bet you could do that, but adjust the amount of liquids you put in there, since the cauli won't absorb the liquids like rice!
(I just bought 3 bags of the riced cauliflower! I'm making fried 'rice' with it and including beef chicken and shrimp! Mmmmm)

You may try quinoa... little goes long way. But last time I made stuffed peppers - I chopped celery very very fine - and used that to mix with my meat.. Honey got the ones with the rice...
I plan to make some this weekend using "wild rice". Wild rice is not really rice.. but seeds of some long grass thingy.. I had to cook that for like ever to break them down...

unfortunately quinoa does not sit to well either, too bad cuz I love it. I do love your celery idea, I LOVE celery! Thanks for the idea!
