Christmas Cookies

I always make gingerbread at Christmas time.  Usually I bake a bunch of cookies and then put various icings on a lazy Susan in the middle of the kitchen table and we decorate when we need a little Christmas spirit.  Great for family time and also...just plain fun!   This year I am sweetening my cookies with Maltitol but other than that...I'm set.   So what kinds of Christmas cookies are you planning to make?  Do you have a favorite recipe to share with your OH peeps? I am not sure this is considered a "Christmas cookie" or not. But my mom used to make no bake cookies all the time (or drop cookies if you call them that). I haven't had them in years. Someone brought some to work the other day and I couldn't eat not one bite because they had sugar in them so I behaved myself. Now I WANT them. So, I found a SF recipe using splenda and I plan on making them really soon! They are the ones with peanut butter and oats and you drop them on wax paper to harden. Yummy Yummy.

These will also have protein and fiber thanks to the peanut butter and oats. With Splenda instead of sugar they can actually be a guilt free snack.

Hey. Here is this recipe I got. I can't wait to try them! I haven't made these yet so I do not know how they are going to turn out. If you make them before me, let me know. I plan on trying them in the next few days. And Susan made me feel even better about them. Maybe I can call them Protein snacks instead of cookies so they do not sound so guilty!

No Bake Cookies

2 c. Splenda
1/2 c. low fat or skim milk
1/4 c. cocoa
1/2 c. butter
1 tsp. vanilla
1/2 c. peanut butter (crunchy or smooth depending on what you like)
1/4 tsp. salt
3 c. oatmeal

Combine sugar, milk, butter and cocoa in saucepan. Bring to a rapid boil and cook for 1 ½ minutes EXACTLEY! Measure time from the beginning of a full rapid/rolling boil. Timing is critical.  Remove from heat and stir in peanut butter, oats and vanilla quickly. Drop by spoonfuls onto wax paper. Let cool until hardened.

OMG!!!!!!!!!!!!!! this sounds awesome, I gotta make them. thanks for sharing.  I also wanted to wish you and DH the best on the baby, I'm sure that it really still hasn't hit you yet. Misty, I have been craving these sooooooo badly! I had 1/2 of a small one a few weeks ago and they haven't left my brain ever since lol I hope your splenda recipe works out... let me know ok!?

Hey. I tired the recipe last night. It turned out pretty good. I would make a couple of changes next time. First, it seemed really "sweet" to me. I checked out other recipes and they say to only use 1 3/4 cup of sugar/splenda so next time i would probably cut back to that instead of 2 cups. I also did not use any salt because I never heard of that. So, the salt is optional. I chose to leave it out.  I used crunchy peanut butter so next time, I think I might microwave the peanut butter for a minute to soften it up so it will mix better and faster. Other than that, it turned out pretty good and really easy and quick to make.

Freddie ~  I have a chocolate chip recipe from Splenda, but have not tried it yet. Probably will this week. Let me know how yours turns out and I will be looking to see if anyone else posts recipe's on here!  BTW - where do you buy maltitol and how do you use it? Misty ~ I HAVE to have that recipe!!
