Well, you would think after all the food we had yesterday, I would not think about any thing new for a while.  Wrong!  For dinner yesterday evening, I used left overs we had from fajitas and made a Fajita Pizza. Food porn and a description is at the link below.  It just seemed like a great idea to use up the leftovers!  Hope you enjoy! Fajita Pizza

Scott,
Thanks for sharing that looks great!! I will have to try that soon.
I have discovered Veggie Chips tonight and they are wonderful! I love the sweet potatoes and green beans. They are very good and hit the spot for chips...

Keep up the good work!

It wouldn't let me call up Eggface's blog.  But I love the low carb pizzas.  I found that one on my own after surgery...  and made them at a protein party.  Tim loves them now, and we had them for supper the other night.  I love it when I find something to cook that he actually likes.  I just put on some low sugar Barilla spag sauce, sprinkle with pepperoni, turkey pepperoni is best for new postops, cheese, a little onion, bell pepper (I like red peppers best, sweet and dont upset my tummy) and salt, pepper.  I used to only eat 1/4 but now i can eat 1/2.  But I am not a big tortilla eater still...  they are good!

I see you make your pizza like eggface does in the oven on 350 for a little bit of time. I am used to the way Melinda taught me which is to broil the tortillas for a couple of minutes on each side (flipping often) and then topping it and then putting it back in under the broiler for a minute so the toppings get hot. It makes it come out crispy. I have never tried it your way before. Do the tortillas come out crispy at 350? I really don't like bread or tortillas too much unless they are toasted really crispy. Then I can tolerate them. I feel like I could do a lot more with pizzas and the toppings if I could do it your way instead of the broiler way. So, are they crispy? Thanks!
