Menu for one month out

Hi all - I am one month out today.  I have not really been cooking for my daughter (19), she has been making frozen dinners for herself, etc.  I feel the need to start making us dinner again.  But I am at a loss on what to make for both of us.  Any suggestions would help. Thanks.

What about Mexican?  You could make some refried beans, top with cheese, salsa, quac, etc. you could eat it just like that, she could roll into a bean burrito or add to chips for nachos.

I don't know what you are allowed at this stage, but you could put some protein into the crock pot (like pork loin, etc.) with some mushroom soup, coo****il really tender, serve with mashed potatoes and a veggie for her, you can put some of the gravy on some mashed potatoes (stir in a little unflavored protein for a protein boost) and some of the tender meat (if allowed).

Breakfast for dinner?  Scrambled eggs with cheese for you, add some turkey bacon/sausage for her.

Eggface has a ton of great recipes, I want to try the noodle-less lasagna.

Good luck, I am making myself hungry thinking about this, I am on liquid pre-op now, ugh.

One of my favorite meals right now (I am 6 weeks out) is stir fry. I spray a pan with cooking spray, throw in some cabbage, mushrooms, and cooked chicken. Cook for a bit then add some sugar free teriyaki sauce. Cook a bit more and it's done. You could use whatever veg and protein you like. Quick and simple!
