Crustless Quiche

Hi everyone. Thought I'd post a recipe I've been using for the last month to help me keep carbs in check. The recipe is adapted from one at ALLRECIPES.com.

5 eggs
2 cups cheese
10oz spinach
1 onion
1/2 cup mushrooms (depending on the carbs you want in)
1/2 tsp salt
1/8 tsp black pepper
2 garlic cloves

Cook your spinach down if it is fresh untill all the water is cooked out and it's soggy or thaw and squeeze out excess water from frozen. Sautee your onions till see through add in garlic. This is where I add in spinch if I use fresh too. Put everything into a bowl mix. Spray a pie pan with cooking spray. Put in and cook at 350 for about 30 min until the top is starting to brown and the middle is set (doesn't look liquid anymore). Cut into 6 or 8 pieces. It's great to heat up in the morning 3 min in the oven or a few secs in the microwave. You can put it into muffin tins if you want but I find that dries it out.

I make one on Saturday and eat it the rest of the week.

Have been doing this in mini muffin tins... Love it! I find that if I dampen a paper towel and wrap two mini quiches in it and nuke for about 45 secs, they don't dry out too bad. Thanks for posting!

I can't remember exact carb count but I think it's about 3-4g/slice. You can use ANY kinda cheese you want. If I have leftover cheese I put it all in there. The only one I haven't been happy with is an all swiss cheese one. But I've use parm/cheddar/motz/riccotta/colby&jack mix. Whatever is on sale or left in the fridge.

You can also put in sausage or ham or bacon in there too. Practically anything.

1/2 cup of chopped and cooked mushrooms equal 1 carb and that a good carb.  

I make something similar with broccoli, spinach and cauliflower
