Any sleevers not getting full
I was sleeved two days before you and I'm eating half a chicken breast with no trouble, though that pretty much fills me up. Depending on the particular breast, that's somewhere in the 2-4 ounce range, which seems to be standard for most people at this stage. I think that if I were trying to survive on two tablespoons, I'd have had to invent a larger tablespoon.
I'm a little over a month out and can easily consume 3 oz of food and be satsified. Your doc is wrong about your portions being 8 weeks out.
This is coming straight from my doc's book for reference:
Stage 1: First week
Liquid diet
Stage 2: Weeks 2-4
Limit is 2-3oz of food OR 6 Tablespoons
Stage 3: Weeks 5-7
Limit is 3-4oz of food OR max 8 Tablespoons
Stage 4: Weeks 8+
Limit is 4-5oz of food
You should also take into consideration how you feel - if you start feeling pressure in your chest that is your sign to stop eating. The above are guidelines from the bariatric center I belong to. The idea is to be eating 1/2 cup of food when you are beyond week 8. This will lower your dependancy of protein shakes as you'll be able to get your protein through food.

WOW. I guess its just me, but I can definitely eat a bit. I think with everything (roughly) broken down (chewed) I can get about a half cup or so in there. so probably about 4 oz of meat. Im about a month and a week out. I was off liquids like my first week out. I dont know if that makes a difference or not.
Tablespoons seem kind of arbitrary ... heaped? level? I think it's so much easier with ounces or grams or something you can weigh or else 1/4-1/2 cup that you can measure more easily.
I think maybe you need to retalk this over with your doctor because it certainly seems different from everything else I have read or seen (bearing in mind I don't have my surgery until Thursday so all my info is from books, my doc, my Nut and patients in my wls support group plus here online...
Of course we tend to think our docs know best and I'm certainly not to second guess a professional, but with all the other data seeming to contradict him/her on this, I'd definitely want another professional opinion especially in light of the need to get 80 grams of protein or more per day.
Or, as another writer so cleverly suggested, a larger tablespoon.
