Try this official site. We can soup and chili alot, actually making chicken soup today! When I do pints it's 1 hour and 15 minutes at 15# pressure. I believe it's the same for meat (you "can" to the requirements of ingredient requiring the longest time).

Since you are already familiar with pressure canners, there's really nothing new for you to learn. Best wishes. We find that for my husband and I pints work best, each pint makes a meal for both of us.

You can vacuume seal cooked meats, we cook the whole turkey the serve whatever is left is portioned out And vacuume sealed in some gravy or stock or pan drippings

You can use the pressure canner to can turkey. I've canned chicken before with great success. Just follow the guidelines in the Ball Canning book and it will be fine.
