This is really nothing new.....Just being experimental on the sauce. I'm finding I need to really concentrate on low carb sauce alternatives.

Roasted Beef Tri-Tip (3oz.)
with a 50/50 Greek Yogurt/Mayo, Sriracha, minced garlic, salt, pepper, Splenda sauce with diced cucumbers folded in......
Tried to keep it Mayo free......no dice .....

Damn you, Frisco! That picture is making me want some beef and at six weeks out, beef is out of the question. UGH..... Serves me right! I knew there was going to be some food porn in this post.

I am only one day ahead of you and struggling with denser proteins.  However today I tried beef tenderloin medium rare. I ate 3 ounces without any problems. It was very juicy and I ate it slowly with small bites and chewed really well.  I was shocked at how well I tolerated it .  I am in the soft food phase but have found that the food I have been eating moves out of my stomach too quickly so tried beef for the first time. The cut of beef was very tender and soft.

That looks so yummy..  Sauce is simple to make too.. Great Idea.  Your recipe ideas are so helpful Frisco.
