Of course! I LOVE trying new recipes and I have so much fun making them fit with my likes and nutritional needs.
Below are both of the recipes exactly as I found them on-line along with their nutritional amount.

I however always adjust the recipes to fit me. For instance the Taco bake will be made with ground turkey instead of beef, I will be omitting the black been and corn salsa and I will be using two low carb wheat tortillas. Please also know that the "serving sizes" are for not VSG sizes so expect to eat 1/4- 1/2 of a serving size.

Low Carb Beef and Black Bean Taco Bake

1 lb. ground beef, browned
1 can black beans, drained and rinsed
1 jar of black bean and corn salsa
2tortillas, corn or flour, cut into bite sized pieces
2 cups cheddar or Mexican blend cheese, shredded

1.    Mix all the ingredients together in a large bowl.
2. Pour into a 9×13 casserole dish that has been sprayed with cooking spray.
3. Cover and bake at 350 degrees for 30-45 minutes.

 Crockpot Chicken Tortilla Soup

1 pound frozen chicken (shred near end of cooking time)
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
3(14.5 ounce) cans chicken broth
1 teaspoon cumin
1 teaspoon salt
1/4 teaspoon black pepper
1 (10 ounce) package frozen corn
1 can black beans, rinsed

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in chicken broth, and season with cumin, salt, and pepper. Stir in corn and black beans. Cover and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. Garnish with crushed tortilla chips, sour cream, shredded cheese, or avocadoes. (Note: garnishes not included in nutrition information) Makes 8 servings.

I am being extra good this week, support group meeting on Wednesday and I need to be back to my 105 lbs. by then.  One more pound to go.

B:  skipped breakfast, I know this is not good for me, I really almost never do this, but I got up late and had to get the kids to school.

S: Chickpea pattie from Costco 120 calories.

L: Tortilla soup from Costco 1.5 cups 225 calories

S:  Skinny cow ice cream bar 100 calories ( I know this is not a great choice, but I ate it so I am including it, the truth is not always pretty.  :)   ).

D: tilapia with curry sauce and cauliflower.  200 calories

S:  Maybe and Adelle''s artichoke and garlic sausage, 150 cals.

My plan is to stay under 800 calories today and tomorrow.  That should get me to goal for Wednesday, and if not, I did my part.
