Lunch today! (pic)
My mini tostada. 1/2 a corn torntilla (which is 1/4 of a serving), 1/4 cup mexican shredded cheese (in this case full fat because that's all I had but I think 2% is the better option), 1tbsp refried beans, 1tbsp greek yogurt and 1tbsp Jack's med/hot special salsa for dipping.

Calories: 174
Carbs: 14 (a little high)
Fat: 8
Protein: 11
All in all a good lunch I think.

If you are worried about the carb count you can always use Low-carb wheat tortilla's. The ones I use are Mission Carb Balance Whole Wheat Fajita Size Tortilla's. For one WHOLE tortilla it is 12 carbs so half would be just 6 carbs. They are pretty yummy too!
I make homemade pizzas with them for a quick lunch.
