Perhaps kimchi is not the best pre-bed nibble..
So.. I have these mason jars in my fridge with fermenting bok choy kimchi. I need to burp them once in a while since the gasses build up, and tonight I felt nibbly- needed some snacky thing but didn't want any big cals, so pulled out some of this and have been checking the board and nibbling. I am now having the occasional gurgly kimchi burps.. the stuff is very zingy fermented (read lightly carbonated!) Oh, and garlic-y.. my husband will love my breath tonight.. Oh well. My guts love the stuff. I just found it funny, carbonated cabbage!

I LOVE KIMCHI!!! I would've never thought of eating it to help burp, but i'll keep it in mind. I'm sure you hubby would take garlic breath over gas, lol. (More room out than in) Have a good night.
Kimchi Rules !!!
I'm impressed you do your own !!! Nice !!!
I do Kimchi many ways....easy flavor......
One of go to my "Save a Chicken" Sauces/Lube is what I call a Kimchi Aioli:
Greek Yogurt (in maintenance a little added mayo)
Kimchi and some juice, scallions, cilantro with just a touch of Splenda.
Pulsed in a mini Food Processor......chunky with crunchy bits.....
Delish !
Works on Beef or Pork also....a little strong for fish......
I might have this tonight over some thin sliced Rib Eye!!!

Great. Now I want some kimchi! LOL. And yes, any pickled/fermented veggie is also my friend!
