It seems as if all I can eat is beef right now.

Any good and simple recipes you'd like to share?

Also looking for a good turkey meatball recipe to try.  I HATED the Jennie-O ones I bought frozen.  Yuk!

I'm kind of boring with beef right now.  I only really like fresh ground beef and I will either season with a taco seasoning, use steak sauce, or do cheese, mustard, and onion.

For me the key to turkey is to add some stuff to make it less dense, though then you have more volume.  I like to add finely diced mushroom, a little bit of milk soaked bread crumb, plus onion and/or garlic.

My favorite recipe is the Beef and Bean Bake from theworldaccordingtoeggface.com .  I get many of my recipes from her site it's wonderful!  Sometimes I make this with ground turkey instead of beef and it's just as good.  I found jenny-o makes a taco and italian seasoned ground turkey and I buy them both and use for recipes.  The Italian seasoned meat is great for pasta sauce (I use spaghetti squash) and meatballs.

Make your own and freeze them:
With turkey you have to add veggies to keep it moist so dice up some green/red peppers some spring onions, maybe even some spinach and saute for a couple of Min's then add to meat mixture then add some breadcrumbs seasonings (I like the Italian dressing mix) and a couple of egg whites to bind it (I also add some cream of mushroom soup) you want the meat mixture to be a little wet but not too much. I measure out the meatballs with an Ice cream scoop and brown on med. in a pan. Once they are browned on all sides then I let them low-simmer in a sauce for another 20-30 Min's. If you are freezing just leave out the sauce step and that is how you heat them when you are ready to eat. You can use your imagination with the sauces I have done marinara, sweet & sour, BBQ, satay, asian sesame all were great. Good Luck!

The beef stew I make is more of an Indonesian or Thai inspired one.  I use the typical stew beef and veggies, but add some coconut extract to the broth, which is typically water, sodium free beef boullion powder, some red wine, gravy master, and salt, pepper, cumin, coriander, bay leaves, curry powder, and rosemary.  When the stew is done, I take some of the broth and mix in about 1/2 cup, depending on how much stew I made, of unsalted natural peanut butter - smooth or chunky, until well blended.   I then add this mix back into the stew.  It's good served right when made, but we find the flavors blend better and the broth thickens up more after the stew's been refrigerated and reheated.

I'm not allowed beef until at least 75% of EBW lost.  I am not even planning on having it until goal.
